I started taking the Thomas Keller Masterclass, which reminded me to go back to his Ad Hoc cookbook. The very first recipe is “Dad’s Chicken” on page 2. Of course, the local market didn’t have collard greens and I wasn’t paying $12 for a small box of strawberries, so I adapted with brocollini and grapes and sautern. Also, since every Bellows dinner needs onions and mushrooms, I roasted them up together and served them as an appetizer. It was great.
